Simple pastry for fall’s faster pace

The end of summer means a series of adjustments. School begins, schedules change, the days shorten. All of a sudden, the moments that once were relaxed become a bit more packed.

Whenever this happens, I adapt my baking accordingly. A dessert that helps me make this transition is a simple pastry filled with an equally easy homemade jam. The result is like a giant homemade Pop-Tart that can be cut up into squares for easy serving.
